Ingredients

  • 2 cups milk 480ml
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • ½ cup unsalted butter melted (113g)
  • ¼ cup granulated sugar 50g
  • cups all-purpose flour 270g
  • 1 tablespoon baking powder
  • ¾ teaspoon salt

Instructions

  • Begin by preheating your waffle iron. For a crispy texture, select a higher heat setting if your waffle iron has adjustable settings.
  • In a sizable mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, and salt. In a separate medium bowl, whisk together the milk, melted unsalted butter, large eggs, and vanilla extract. Gradually pour the wet ingredients into the dry ingredients, stirring gently until the batter is just mixed.
  • Once the waffle iron is hot, lightly grease it with butter or cooking spray. Pour approximately 1/3 cup of batter onto the waffle iron for each waffle, adjusting the amount based on the size of your waffle maker.
  • Cook the waffles until they are a rich golden brown. To maintain their crispiness, place the cooked waffles on a wire rack until ready to serve. Enjoy your waffles hot, topped with maple syrup, butter, or any of your favorite toppings.

Notes

Use room-temperature eggs if possible. While it's not essential, it can enhance your waffles. If you're making waffles first thing in the morning and only have cold eggs, don't worry—your waffles will still be delicious. However, if you can, set the eggs out 30 minutes to an hour before starting.
Weigh the flour for best results. If you prefer not to use a kitchen scale, lightly fluff the flour in the bag and spoon it into your measuring cup, leveling it off with a knife. Avoid scooping directly from the bag. For this method, use 2 cups of flour. If using a kitchen scale, measure 270 grams, which equates to 2¼ cups of flour. Both methods will yield perfect waffles, as tested numerous times.
Don’t over-mix the batter. Once the wet and dry ingredients are just combined, the batter is ready. It might be slightly lumpy, but that's fine! Those lumps contribute to the fluffy texture.
For waffles that stay crisp, place them on a wire rack as soon as they're done. Piling them on a platter causes them to release steam and soften. You can also keep the oven warm at 200°F and place the wire rack inside to maintain the waffles' warmth.
Between waffles, let the waffle iron reheat. A warm waffle iron won't produce crisp waffles; it needs to be extremely hot. Allow at least 30 seconds between each waffle for the iron to heat back up.
