Ingredients

  • 2 6-oz. cans tuna
  • 1/3 c. mayonnaise
  • 1/4 c. finely chopped red onion
  • Juice of 1/2 lemon
  • 2 dill pickles finely chopped
  • 1 ribs celery finely chopped
  • 2 Tbsp. freshly chopped parsley
  • 1/2 tsp. crushed red pepper flakes optional
  • Kosher salt
  • Freshly ground black pepper
  • 8 slices bread such as sourdough
  • 4 Tbsp. butter
  • 1 tomato sliced
  • 8 slices cheddar

Instructions

Step 1

  • Preheat your oven to 400°F. In a spacious mixing bowl, combine the mayonnaise, freshly squeezed lemon juice, and crushed red pepper flakes (if you prefer a touch of heat).

Step 2

  • Thoroughly drain the tuna and add it to the mayonnaise mixture. Using a fork, gently flake the tuna until it's well combined. Stir in the finely chopped celery, dill pickles, red onion, and parsley. Mix until everything is evenly distributed. Season to taste with kosher salt and freshly ground black pepper.

Step 3

  • Generously butter one side of each slice of bread. On the unbuttered side, layer approximately 1/2 cup of the prepared tuna salad, followed by 2 to 3 slices of tomato, and top with 2 slices of cheddar cheese. Place another slice of bread on top, with the buttered side facing up. Repeat this process for the remaining sandwiches. Arrange the assembled sandwiches on a large baking sheet and bake in the preheated oven until the cheese is thoroughly melted and the bread is golden, about 5 to 8 minutes.
