Ingredients

  • 1/2 cup 113g unsalted butter, softened
  • 3/4 cup 180ml warm milk
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon almond extract
  • 4 cups 500g all-purpose flour
  • 1/2 cup 100g granulated sugar
  • 1/2 teaspoon salt
  • 2 teaspoons instant yeast
  • 1/2 cup 80g raisins
  • 1/2 cup 80g dried cranberries
  • 1/4 cup 40g candied orange peel, finely chopped
  • 1/4 cup 40g candied lemon peel, finely chopped
  • 1/2 cup 50g sliced almonds
  • 1 teaspoon ground cinnamon
  • 1/2 cup 60g powdered sugar (for dusting)
  • Optional: marzipan for the center

Instructions

  • In a spacious mixing bowl, combine the flour, sugar, salt, and yeast to create a uniform base. Gradually pour in the warm milk, softened butter, egg, vanilla extract, and almond extract. Knead the mixture until a soft and pliable dough forms, a process that should take approximately 8 to 10 minutes.
  • Gently fold in the raisins, cranberries, candied orange and lemon peel, sliced almonds, and ground cinnamon. Ensure the ingredients are evenly distributed to enhance the flavor throughout the dough.
  • Transfer the dough to a lightly greased bowl, cover it with a damp kitchen towel, and place it in a warm environment. Allow it to rise undisturbed for 1 to 2 hours, or until it has doubled in volume.
  • Roll the dough into a rectangular shape on a lightly floured surface. If including marzipan, position it in the center of the rectangle, then fold the dough over, sealing the edges securely. Shape the dough into an oval or loaf, as preferred.
  • Place the shaped dough onto a baking sheet lined with parchment paper. Cover it loosely with a cloth or plastic wrap, and let it rise for another 45 minutes, allowing it to puff slightly.
  • Preheat your oven to 350°F (175°C). Bake the stollen for 30 to 40 minutes, or until it achieves a rich golden-brown hue and is baked through.
  • Once removed from the oven, brush the warm stollen generously with melted butter. Immediately dust it with powdered sugar, coating it thoroughly. Allow the stollen to cool completely before slicing.
  • Cut the stollen into slices and savor it alongside a hot cup of tea or coffee. This festive treat is perfect for sharing and enjoying during the holiday season.
