Ingredients

  • 2 cups cold tap water
  • 1-2 teaspoons raw honey
  • A tiny pinch of black pepper
  • 1/2 a small pie pumpkin yields approximately 2 cups, chopped*
  • 1- inch piece of fresh ginger
  • 1- inch piece of fresh turmeric

Instructions

  • Begin by halving the pumpkin, scooping out the seeds, and removing the skin. A helpful method is to cut the pumpkin into quarters, then carefully trim off the skin using a sharp knife. Dice the peeled pumpkin into small cubes for blending.
  • Add the diced pumpkin, fresh ginger, fresh turmeric, and cold water to a blender. Blend the mixture for about 10–15 seconds, or until the pumpkin is completely pureed and smooth.
  • Place a fine mesh strainer over a large bowl or measuring cup. Pour the blended pumpkin mixture into the strainer. Use a spoon to press down on the pulp, extracting as much juice as possible into the bowl.
  • Sweeten the strained juice by stirring in raw honey to taste, adjusting the sweetness as needed. Sprinkle in a tiny pinch of black pepper for a subtle kick.
  • Pour the pumpkin juice into a glass filled with ice and serve immediately for the best flavor and freshness.

Notes

You can use any type of pumpkin for this recipe since their raw flavor profiles are quite similar. I've tried it with sugar pie pumpkin, red kuri squash, kabocha squash, and even butternut squash! Feel free to choose whichever you have on hand or the one that's easiest to peel.
