Ingredients

For pink drink:

  • 2 cups white grape juice
  • 1 cup unsweetened coconut milk
  • 2 tablespoons strawberry simple syrup *see recipe below
  • 1/2 cup sliced strawberries fresh

For strawberry simple syrup:

  • 1-1/2 cups diced strawberries
  • 1 cup granulated sugar
  • 1 cup water

Instructions

For pink drink:

  • In a pitcher, combine white grape juice, unsweetened coconut milk, and strawberry simple syrup.
  • Stir the mixture until well blended. Taste and add more strawberry simple syrup if desired.
  • To serve, pour the drink over ice and garnish with fresh strawberries.

For strawberry simple syrup:

  • In a medium-sized saucepan, combine diced strawberries, granulated sugar, and water. Stir gently to mix.
  • Place the saucepan over medium heat and bring the mixture to a simmer. Cook until the strawberries become soft and the syrup thickens, about 15 minutes.
  • Remove the pan from heat and let the syrup cool for approximately 30 minutes.
  • Strain the syrup through a fine mesh strainer into an airtight container or jar. Store in the refrigerator for up to a week.
