In a medium-sized saucepan, combine diced strawberries, granulated sugar, and water. Stir gently to mix.
Place the saucepan over medium heat and bring the mixture to a simmer. Cook until the strawberries become soft and the syrup thickens, about 15 minutes.
Remove the pan from heat and let the syrup cool for approximately 30 minutes.
Strain the syrup through a fine mesh strainer into an airtight container or jar. Store in the refrigerator for up to a week.
