Ingredients

Cake:

  • 1 large egg beaten
  • 2 cups mulberries
  • ½ cup white sugar

Crumb Topping:

  • ¾ cup all-purpose flour
  • ¼ cup white sugar
  • ½ cup brown sugar
  • 3 tablespoons butter

Instructions

  • Start by preheating your oven to a warm 375 degrees F (190 degrees C). Lightly grease an 8x8-inch baking dish to prepare it for the batter.
  • In a mixing bowl, combine the milk, ½ cup of white sugar, the beaten egg, and vegetable oil. Whisk these together until well blended. Gradually sift in the flour, baking powder, and salt, stirring continuously until the mixture achieves a smooth consistency. Transfer this batter into your prepared baking dish, spreading it evenly. Generously scatter the mulberries over the batter.
  • For the crumb topping, take another bowl and blend together ¾ cup of flour, both the brown and white sugars. Slice the butter into small pieces and work it into the flour and sugar mixture using a fork or pastry blender. Continue this process until you achieve a crumbly texture, roughly taking about two minutes. Evenly distribute this crumbly mix over the mulberries.
