Ingredients

  • 12 oz bag of white chocolate chips
  • 1 tablespoon coconut or vegetable oil
  • 1 cup candy corn
  • 8 cups popped popcorn approximately 1/4 cup kernels
  • 1 cup Glutino Pretzel Twists or Snyder’s GF
  • 1 cup peanuts
  • Optional Halloween sprinkles
  • Optional coarse sea salt
  • Optional edible eye decorations

Instructions

  • Prepare two large baking sheets by lining them with parchment paper or silicone baking mats to prevent sticking.
  • In a spacious mixing bowl (or divide between two bowls if needed), combine the popped popcorn, pretzel twists, and peanuts, ensuring an even mix.
  • In a separate microwave-safe bowl, add the white chocolate chips and coconut oil. Heat in the microwave for 30 seconds, then stir. Continue microwaving in 10-second intervals, stirring in between, until the chocolate has melted completely and is smooth.
  • Pour the melted chocolate over the popcorn mixture, then gently fold using a rubber spatula until all ingredients are thoroughly coated. Sprinkle in the candy corn and mix to distribute evenly.
  • Spread the coated mixture into a single layer on the prepared baking sheets. Immediately sprinkle with Halloween sprinkles and a pinch of sea salt if desired. Lightly press down on the mixture so that the toppings adhere to the chocolate.
  • Allow the snack mix to cool completely, giving the chocolate time to set. Once fully cooled, store any leftovers in an airtight container or resealable bags for optimal freshness. Enjoy this festive treat!

Notes

  • Use an air popper for making fresh, fluffy popcorn.
  • Nestle white chocolate chips are labeled gluten-free, making them a great choice.
  • For a gluten-free version, use Rice Chex and gluten-free pretzel sticks. Avoid Wheat Chex and other Chex varieties that aren’t gluten-free.
