Ingredients

  • 2 ounces white rum
  • ¾ ounce lime juice
  • 1 ½ teaspoons sugar adjust to taste
  • Ice
  • Club soda or sparkling water recommendation: Topo Chico
  • Entirely optional: 1 to 2 drops of Angostura bitters
  • 4 leafy sprigs of fresh mint each about 5 to 6 inches long
  • 1 lime round for garnish

Instructions

  • Start by placing the sugar and 3 sprigs of fresh mint into a sturdy, heavy-bottomed, tall cocktail glass, reserving the last sprig for garnishing.
  • Gently muddle the mint with the sugar about 5 to 10 times, ensuring the mint releases its aromatic oils without disintegrating completely.
  • Add the white rum and freshly squeezed lime juice to the glass, stirring gently a few times to assist in dissolving the sugar. Then, fill the glass with ice cubes.
  • Top off the glass with club soda or sparkling water, nearly reaching the rim. Stir gently in a circular motion to mix, then use your spoon to lift some of the muddled mint higher up into the glass.
  • Taste the mixture, adding more sugar if you prefer a sweeter drink. Optionally, incorporate 1 to 2 drops of Angostura bitters.
  • For garnishing, place a lime round in the glass. Lightly clap the remaining sprig of mint between your palms to release its essential oils and tuck it into your drink, leaving the top visible. Serve chilled, ideally with a wide straw for an enhanced sipping experience.

Notes

MEASUREMENT TIPS: Using standard measuring cups and spoons, remember that two ounces equal ¼ cup and ¾ ounce equals 1 ½ tablespoons.
