Ingredients

  • 1/4 cup butter melted
  • 2 tablespoons chopped parsley
  • 1 1/2 tablespoons lemon pepper seasoning
  • 3 lbs party-style chicken wings separated into sections
  • 1 cup all-purpose flour
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • Oil for frying
  • Lemon wedges and parsley sprigs for optional serving

Instructions

  • In a large mixing bowl, combine the all-purpose flour with salt and pepper, stirring until well blended. Gently place the chicken wing sections into the seasoned flour, ensuring each piece is thoroughly coated.
  • Heat the oil in a deep pot, bringing it to a temperature of 350 degrees F. Carefully add the chicken wings in small batches of 6-8 pieces, frying them for about 10-12 minutes until they achieve a rich golden-brown color and are fully cooked. Continue frying the remaining wings in the same manner.
  • In a separate small bowl, mix the melted butter with the lemon pepper seasoning. Once the wings are done, generously brush them with the butter mixture, tossing to ensure even coverage. Finish with a sprinkle of chopped parsley.
  • For an optional touch, serve the wings garnished with lemon wedges and parsley sprigs.

Notes

  • A thermometer should be used to ensure the frying oil is at the correct temperature, ideally between 350 and 375 degrees F.
  • If the oil is too hot, the wings may burn on the outside before fully cooking on the inside. Conversely, if the oil is too cold, the wings could absorb excess oil and become overly greasy.
  • Peanut oil is commonly used for frying wings, though any oil with a high smoke point, such as vegetable or canola oil, will work effectively.
