Ingredients

  • 12 tbsp unsalted butter melted (170g)
  • 3 cups all-purpose flour divided (360g) – 2 1/2 cups for the crust, 1/2 cup for the filling
  • 2/3 cups powdered sugar 66g, plus extra for dusting
  • 1/2 tsp salt
  • 3 tbsp lemon zest zest of 3 lemons
  • 3 cups granulated sugar 600g
  • 1 cup freshly squeezed lemon juice 240mL
  • 8 large eggs room temperature

Notes

  • Always use fresh lemon juice! Lemons are the key ingredient, and using concentrate or bottled versions won't give you the same vibrant flavor.
  • Line your baking dish with parchment paper. It makes removing the bars much easier, but if you're in a pinch, foil works too.
  • If the bars seem not fully set when you take them out of the oven, don't worry! They will firm up as they cool.
  • Lemon bars are a perfect make-ahead dessert. Cut them, freeze on a baking tray, then wrap each piece individually. Store in the freezer for up to three months. Dust with powdered sugar just before serving.
