  • 8 bone-in chicken thighs
  • 1 tablespoon extra-virgin olive oil
  • ¼ cup honey
  • ¼ cup Dijon mustard
  • 2 garlic cloves minced
  • 1 ½ teaspoons finely chopped fresh rosemary
  • 1 ½ teaspoons finely chopped fresh thyme
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper

Instructions

  • Begin by preheating your oven to 350°F (177°C). Prepare a baking dish and arrange the chicken thighs in it, ensuring they are patted dry with a paper towel to remove excess moisture.
  • In a small bowl, combine the honey, Dijon mustard, minced garlic, olive oil, rosemary, thyme, salt, and pepper. Stir well until the mixture is smooth and thoroughly blended.
  • Generously coat the chicken thighs with the honey mustard mixture, either by brushing or spooning it over the top, making sure each piece is well-covered.
  • Place the baking dish in the oven and bake for 40 to 45 minutes, or until the chicken reaches an internal temperature of 175°F (80°C) and is cooked through. For a crispier skin, switch on the broiler for the last 2 to 3 minutes of cooking.
