Ingredients

  • 1 cup jasmine rice uncooked and rinsed
  • 1 14-ounce can of full-fat coconut milk*
  • ½ teaspoon sea salt optional
  • Juice and zest of 1 lime optional
  • ½ cup chopped cilantro optional
  • Chopped cashews optional

Instructions

  • In a medium-sized pot, pour in the rinsed jasmine rice and coconut milk. Set the pot over medium heat and bring the mixture to a boil. Once boiling, cover the pot with a tight-fitting lid, reduce the heat to low, and allow the rice to simmer for about 15 minutes, or until all the liquid is fully absorbed.
  • After cooking, take the pot off the heat and leave it covered for an additional 10 minutes to let the rice rest. Afterward, fluff the rice gently with a fork to separate the grains.
  • If desired, stir in the sea salt, lime juice, and zest for added flavor. Toss in the chopped cilantro for a burst of freshness, and sprinkle with chopped cashews for a delightful crunch. This coconut rice is perfect as a side dish or as a flavorful base for your favorite recipes.

Notes

For a lighter, fluffier rice with a subtle hint of coconut, try mixing coconut milk with water. Use 3/4 cup of water and 3/4 cup of coconut milk instead of the full can.
