Total Time: 5 minutes

Ingredients

Individual Serving

  • ½ cup milk dairy-free or regular
  • 2 tablespoons chia seeds
  • ½ teaspoon vanilla extract
  • 1 teaspoon maple syrup
  • Optional garnishes: fresh fruits nuts, seeds

Larger Bowl (4 servings)

  • 2 cups milk dairy-free or regular
  • ½ cup chia seeds
  • 1 teaspoon vanilla extract
  • 1 to 2 tablespoons maple syrup
  • Optional garnishes: fresh fruits nuts, seeds

Instructions

  • In a bowl or jar, combine the chia seeds, milk, vanilla extract, and maple syrup. Stir the mixture thoroughly to ensure that the seeds are evenly dispersed. Let the mixture rest for about 10 minutes, allowing the chia seeds to begin gelling. After this initial rest period, stir the mixture again to break up any clumps and promote even thickening.
  • Once mixed, cover the bowl or jar and refrigerate it for at least one hour, allowing the pudding to fully set. For a convenient make-ahead breakfast, the mixture can be left to chill overnight.
  • When ready to serve, give the chia pudding a final stir. Add your choice of fresh fruits, nuts, seeds, or spices to elevate the flavor and enjoy.

Notes

  • Nutritional Information: Provided for an individual serving.
  • Tip: If your chia seeds aren't gelling and thickening after 15 minutes, they may be old. Try using a fresh bag of chia seeds.
  • Texture Adjustment: For a thinner pudding, simply add more milk to achieve your desired consistency.
  • Serving Idea: Layer your chia pudding over a strawberry fruit puree—just blend fresh strawberries in a food processor, and you're done!
