Warm the olive oil in a 12-inch cast iron skillet over medium heat. Once hot, add the sliced onions and sauté for around 5 minutes until they start to soften.
Sprinkle in the sea salt, then reduce the heat to medium-low. Continue cooking for 50 to 80 minutes, stirring every few minutes. The onions should become incredibly tender, deeply golden, and fully caramelized. Timing will vary based on the onion size and your stove’s heat level.
If you notice the onions beginning to stick, lower the heat further. If, after 50 minutes, they’re not as golden as you prefer, raise the heat slightly to intensify caramelization, but keep stirring frequently to avoid burning.
