Ingredients

  • 1 ounce Parmesan cheese freshly grated
  • 2 cloves garlic minced
  • 8 roma plum tomatoes, diced
  • 1 loaf French bread cut into ¼-inch slices
  • cup chopped fresh basil
  • 2 teaspoons extra-virgin olive oil
  • 1 tablespoon extra-virgin olive oil
  • ¼ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 1 tablespoon good quality balsamic vinegar

Instructions

  • Gather all ingredients together.
  • Preheat the oven to 400 degrees F (200 degrees C).
  • Brush both sides of the bread slices with 1 tablespoon of olive oil. Arrange them on a large baking sheet and toast in the oven until golden brown, about 5 to 10 minutes, turning them over halfway through.
  • While the bread is toasting, combine the diced tomatoes, chopped basil, freshly grated Parmesan cheese, and minced garlic in a bowl.
  • Add the balsamic vinegar, 2 teaspoons of extra-virgin olive oil, kosher salt, and freshly ground black pepper to the tomato mixture. Stir everything together until well combined.
  • Spoon the tomato mixture onto the toasted bread slices.
  • Serve immediately and enjoy your delicious bruschetta!
