Ingredients

  • 2 tablespoons olive oil
  • 2-3 teaspoons chicken seasoning or Italian seasoning
  • 6 bone-in chicken thighs with skin approximately 6 ounces each
  • Salt and pepper to taste

Instructions

  • Preheat your oven to 425°F. Prepare a rimmed baking sheet by lining it with foil, then place a baking rack on top.
  • Use a paper towel to pat the chicken skin dry, ensuring all moisture is removed. This step is crucial for achieving a crispy finish.
  • Drizzle the chicken thighs with olive oil, ensuring they are evenly coated. Generously season the chicken with your choice of seasoning, along with salt and pepper to taste.
  • Arrange the chicken thighs on the rack, making sure they are skin-side up. Bake them uncovered for 35-40 minutes, or until the internal temperature of the chicken reaches 165°F.
  • For an extra crispy skin, switch the broiler to high and broil the chicken for an additional 2-3 minutes, monitoring closely to prevent burning.

Notes

We love using homemade chicken seasoning, but any store-bought variety will work just as well. Be aware that the salt content can differ between brands, so it's a good idea to taste a bit of the seasoning beforehand to ensure it's adequately salted. If necessary, add extra salt to the chicken. Chicken thighs can range in size from 5 to 10 ounces; the given cooking time is based on 6-ounce thighs. Larger thighs may require additional time in the oven. Leftover chicken can be stored in an airtight container in the refrigerator for up to 5 days. Alternatively, you can freeze the cooked and cooled chicken thighs for up to 4 months.
