Begin by preparing three shallow bowls. In the first, place the flour. In the second bowl, mix together the breadcrumbs, grated parmesan, and garlic powder. In the third bowl, whisk the eggs until well beaten.
Take each mozzarella stick and coat it fully in the flour. Next, dip it into the egg mixture, ensuring it’s well-covered, and then roll it in the breadcrumb mixture. Arrange the coated mozzarella sticks on a baking sheet lined with parchment paper. Place the tray in the freezer for 10 minutes.
Once the sticks are firm, remove them from the freezer and repeat the process—dip them in the egg mixture again, then roll them in the breadcrumbs for a second coat. Return the mozzarella sticks to the baking sheet and place them back in the freezer for an additional 15 minutes, or until they’re fully frozen.
Preheat your air fryer to 390°F around five minutes before cooking. Once the mozzarella sticks are frozen solid, remove them from the freezer and arrange them in a single layer inside the air fryer basket. If needed, cook in batches to avoid overcrowding. Lightly spray the mozzarella sticks with cooking spray and air fry for 6 minutes, or until golden and crispy.
Serve immediately, garnished with parsley, alongside your favorite marinara sauce for dipping.
